A new Spanish family-style restaurant for Windstar ships

Luxury line Windstar has partnered with Michelin-starred chef, Anthony Sasso to create a new restaurant onboard its ships.

The restaurant called Cuadro 44 is part of the line’s $357 (USD$250) million refurbishment of its Star-class ships. Not only will guests get to try new fare, relax in revamped public spaces, but Windstar is also stretching their ships.

The new restaurant will showcase food from Spain’s coastal areas – from the Basque region and the Cantabrian Sea, to southern Andalusia and Jerez.

Dishes at Cuadro 44 will include:

  • Jamon iberico, a 24-month aged pork made from black pigs raised solely on acorns in Southern Spain
  • Lamb chops from Catalonia, served with a mint salsa verde, green apples, kohlrabi, and manchego
  • Pulpo gallego, Galician-style octopus paired with Yukon gold potato salad, pimenton and pickled celery vinaigrette
  • Churros y chocolate from Madrid, cinnamon- and sugar-coated fritters served with spicy hot chocolate and fresh seasonal fruit

Chef Sasso credentials include 13 years at New York restaurant Casa Mono. He also had a stint as a guest chef aboard Windstar’s James Beard Foundation Culinary Collection-themed cruise in the Mediterranean in 2018.

“I’ve spent a lifetime studying Spanish food and culture, working in several Catalan kitchens, traveling the Iberian landscape and learning from and getting inspired by the masters: everyone from the Roca Brothers of El Celler de Can Roca to the unmatchable Pablo Picasso,” he said.

“This new venture with Windstar will be the perfect vehicle to showcase the universally enticing flavours of Spain and its coastal seas.”

The eatery can accommodate 38 passengers and features small-plate dining. The rustic Spanish family-style restaurant will debut on Star Breeze in February 2020. And the restaurant will be added to Star Legend in July 2020 and Star Pride in November 2020. All three ships will visit Spanish ports as their first stops post-renovation.
